Such a great step by step explanation.
I have done it 10times already...it's almost therapeutic.
You will never look at cutting up an onion or a grapefruit the same again.
Highly recommend it for the chicken alone.

(5 stars) - Sharpen those knives! I almost didn't buy this DVD because several of the reviewers bemoaned the lack of a "play all" feature. Then I concluded that, if I wanted to see how to dice an onion properly, why would I want to wade through egg poaching or crouton making before I got to the technique that I wanted? This DVD is laid out in a way that allows you to quickly find what you need and view it immediately.
If you want to learn proper food preparation, this is the DVD to get. If you want to watch whole recipes being prepared, there are many other DVDs from which to choose.
(5 stars) - French Cooking 101 Jacques Pepin is not only a master chef and artist, he is also a wonderful instructor. If you've been curious about the art of French cuisine, this is the most thorough instruction you could receive, especially at this price. He seems to have thought of everything you might need to know, all the way from selecting and sharpening knives to how to use food as a decoration. As for the food, he starts with how to select your food items, then shows you several different ways to prepare each, including presentation. Some of the techniques that really stood out to me are the Buche de Noel (Yule Log cake), making a caramel sauce, preparing fish, making merinque mushrooms, decorating a pate, the French omelet vs. the American version, variety of uses for pastry dough, etc. Once you see how fun and easy these can be, you'll want to try it yourself!
(5 stars) - great gift for newby cook Anyone just starting to cook can be off and running quickly with this guide to basic techniques. The egg section alone is worth the price.
